This is a decaf take on Cloud Picker's Mexico Santa Fé coffee, originating from the Santa Fé farm in Motozintla. It's created with the Mountain Water decaffeination process, resulting in caffeine-free coffee that retains the flavours of biscoff and cherry cola — without any chemicals.

Established in 2013 by Frank Kavanagh & Peter Sztal, Cloud Picker is a roastery in Dublin with the name coming from a trip to Northen Thailand where they visited a coffee farm in the Doi Chang area on the Thai / Burma border and where we went up through the clouds to see the coffee pickers.

This coffee comes from the Santa Fé farm in Motozintla, near the Guatemalan border. Founded in 1855, it is owned by the Muguira family and managed by Jorge Arreola Nava, a cousin of Demetrio Arandia Muguira, who created the Mountain Water decaffeination process. Like the Swiss Water Process, the Mountain Water process involves soaking the beans in water with dissolved coffee compounds, except for filtered out caffeine. This allows the beans to lose caffeine while keeping their flavour intact, without using any chemicals not naturally found in coffee.
