This complex coffee is sourced from an exclusive lot owned by the Al-sahlol family in Eastern Haraaz, Yemen, where fully ripe Jaadi cherries undergo an initial fermentation in airtight water tanks for 73 hours, followed by 168 hours of dry fermentation in temperature- and pH-controlled tanks. These precise and careful processing steps give the Al-Naquie Synthese Wassergeist its rich flavor profile, bearing hints of cognac, rose and nectarine blossoms.
