In Hayma Kharijiya, coffee is a symbol of pride, with locals believing that the coffee tree originated in their land. Some farmers even hold ownership documents going back centuries. Despite the harsh climate and low yields, smallholder farmers remain deeply committed to their coffee trees, never abandoning them, no matter how small the harvest. Hayma is exceedingly high in altitude, grown in ranges around 2200-2300 meters above sea level, giving coffees their intensity. Fully ripe Udaini cherries are placed and sealed in airtight tanks for 142 hours, before being dried on custom raised beds to dry for up to 20.5 days.
